๐Ÿด Dessert in 30 minutes? Yes, really.

Hi Reader!

In the middle of summer nobody wants to spend an hour in the kitchen just because someone wants something sweet. (Or is that just me and my people?)

This week's roundup is all about 30 minutes or less. Cookies, no-bake treats, a mug cake that takes 7 minutes start to finish. All the good stuff without the commitment.

  • โ€‹Strawberry Banana Cheesecake Salad Uses real whipped cream instead of Cool Whip and comes together in 15 minutes. It tastes like a no-bake cheesecake in fruit salad form.
  • โ€‹Strawberry Cake Mix Cookies Five ingredients and 20 minutes. No chilling, no rolling, just scoop and bake.
  • โ€‹Confetti Cookies A sugar cookie base with rainbow sprinkles mixed in, rolled in granulated sugar, done in 20 minutes with no chill time.
  • โ€‹Amish Sugar Cookies No rolling, no fuss. Butter and oil together give these a melt-in-your-mouth texture you don't usually get from drop cookies.
  • โ€‹Lemon Mug Cake Seven minutes. Batter, microwave, lemon frosting, white chocolate chips on top. Makes two servings.
  • โ€‹Cheesecake Stuffed Strawberries Cored strawberries filled with cheesecake filling, dipped in buttered graham cracker crumbs, topped with whipped cream. 15 minutes.
  • โ€‹Lemon Shortbread Cookies Buttery dough with fresh lemon juice and zest, rolled in sugar, pressed flat with a fork. 20 minutes start to finish.
  • โ€‹Easy Berry Trifle with Angel Food Cake Angel food cake layered with fresh berries and whipped cream. No baking at all, just assembly.

My family and I aren't big fans of eating fish...I mean, I know how good it is for you, but we don't love a fishy flavor. When I pair salmon with a bolder flavor, like the pesto in this recipe or the sriracha in my sweet-and-spicy salmon, that's something everyone will eat. Salmon Pesto Pasta This is a quick, easy 30-minute dinner, and the salmon and creamy pesto sauce cook in the same pan! I love...

Hi Reader! One more week of school. ONE. Honestly, I'm barely hanging on over here. I've pulled out every easy dinner I know, and I'm just trying to get us across the finish line without ordering pizza four nights in a row. If you're in the same boat, check out this Roasted Tomato Pasta. It saved me this week! It's hands-off in the oven while the tomatoes turn jammy and concentrated - literally 10 minutes of hands-on time. So good! And then on the sweet side, my Lemon Curd. This is the same...
