🍴 2 new recipes for the home stretch

One more week of school. ONE.

Honestly, I'm barely hanging on over here. I've pulled out every easy dinner I know, and I'm just trying to get us across the finish line without ordering pizza four nights in a row.

If you're in the same boat, check out this Roasted Tomato Pasta. It saved me this week! It's hands-off in the oven while the tomatoes turn jammy and concentrated - literally 10 minutes of hands-on time. So good!

And then on the sweet side, my Lemon Curd. This is the same lemon curd I use in my Lemon Curd Cheesecake, but honestly, it's good on basically everything. Spoon it over yogurt, swirl it into whipped cream, eat it off the spoon while standing at the counter (not that I would know).

If you do make a batch of lemon curd, I have to tell you about these little jars. They're so cute and the perfect size for gifting a small portion to a friend or neighbor. Homemade lemon curd makes a really thoughtful little gift, especially this time of year when teachers, coaches, and end-of-school people in your life deserve something nice.
